Mexican food has enjoyed great popularity in America for years. From burritos to enchiladas, Mexican recipes are the pride of many an American cook and the colorful, spicy, delicious dishes grace many a table. Nevertheless, what is the story behind the cuisine? A little Mexican food history can spice up your kitchen and shed some light on the roots of many or our favorite dishes.

Case in point: when the Spanish invaded Mexico in 1521, they brought with them many new varieties of livestock including pigs, cows and sheep, the likes of which Mexico had never seen. The Spanish explorer Cortez introduced Mexico to these and other foods such as dairy products, garlic and other spices as well as dairy products like cheese. Mexican food also has strong roots in the ancient Mayan culture.

Although Cortez brought new foods to Mexico, Mexico also showed him a thing or two. He encountered a few new food items as well. He was introduced to peanuts, chocolate, vanilla, beans, avocados, coconuts, corn, squash, and tomatoes. It was a great effort of give and take and these foods have all worked together over then centuries to produce wonderful Mexican dishes.

Mexican food history is an interesting mixture of cultures. Many of the Mexican foods that are so-called “traditional” are actually rooted in other cultures in addition to the Mexican culture. Take quesadillas as an example. This mainstay of Mexican families is often considered to be quintessential Mexican, but in actuality, it takes its components from other cultures. The corn tortilla, the foundation for the quesadilla, is actually a Native American creation.

Other staples in Mexican food, lettuce, beef, cheese and pork, are actually Spanish in origin. One standard in every Mexican restaurant and most Mexican dishes, though, the hot sauce made from chili peppers, is indeed Mexican. One interesting Mexican food history fact, though, is that many spices such as cinnamon, black pepper, oregano and coriander, which are generally thought to be Mexican are actually Spanish. While these spices are quite often used in many Mexican dishes, they are not native to Mexico.

In addition to the Mayans, Native Americans and Spanish influencing Mexican food, the French also left their mark. When Mexico was briefly under French occupation in the 1860’s, popular dishes such as chiles en nogado, a dish of stuffed chilies in walnut sauce, was a result. These dishes sport a distinct French flair, but have become a standard part of Mexican culture.

One of the most popular adaptations of Mexican food and an integral part of Mexican food history is the influence from the Southwest United States, namely southern Texas. This style of Mexican food, dubbed “Tex-Mex” has become a favorite of people all over the world. North meets south in this cultural combination of northern Mexico and Southwestern Texas. In many restaurants today, it is more Tex-Mex than authentic Mexican food that is being served.

Mexican food history has enjoyed many different cultural influences, making it varied and rich. This variety of cultural adaptations makes Mexico a veritable melting pot of culinary experiences. This has worked in its favor, though, with delicious dishes and are popular and fun – to eat and to create.

Today nearly nine million teens under the age of 15 are obese, but since 1980 the number of obese teenagers has tripled. The rise in teen-age obesity is staggering. It is even more difficult for teens to be overweight due to health risks and social repercussions.

Accompanying the increase in obesity in children is an upsurge in type two diabetes diagnoses. The increased incidence of obesity has also caused an increase in this form of diabetes. Type 2 diabetes can cause renal failure, blindness, and even death.

Sleep apnea causes those who have it to stop breathing for a brief time during sleep. People that are obese can suffer from sleep apnea, because it can cause breathing problems when lying down. The oxygen insufficiency which results may, depending on the circumstances, lead to major problems ranging from heart and brain damage to death.

Reasearch has recetnly shown that asthma could be related to obesity. In people who are severely overweight, the airways become narrowed due to the under-expansion of their lungs. It has been found that the obese have common low-quality general swelling, this irritations can cause restraints of the air passages when soft muscle tissue are affected.

It’s difficult, but teens need to worry about their body’s health and other things. Overweight teenagers often report that school is a horrifying experience for them. Other kids are cruel and say nasty things to them. Adding to the growing list of problems, overweight teens often become very withdrawn and suffer from depression due to their weight.

Teen eating habits can be attributed to obesity. Teens are known for their preference for junk food. There are alot of schools that no longer allow snack machines that contain unhealthy snacks. They have replaced them with juice, water, and healthy snacks.

The teenager should begin changing their diet at home to go one-step further. Instead for healthy home cooked meals, they are so in love with and opt to stop eating the high calorie fast food.

To slowly introduce healthier choices in your diet, is the best plan. Three regular meals per day and two snacks. Throw away packaged foods in favor of home made. Beginning any meal with a small amount of food on your plate -remember they do not have to clean the plate!- and eating it in a slow, deliberate manner is the basis of “portion control.” Eating several servings of fruits and vegetables will help you balance your diet. Sometimes the feeling of thirst can make us think we’re hungry, drinking plenty of water and staying well hydrated is important and allows your body to function better.

Teenagers are getting less and less in the way of exercise. Increased television access, internet surfing and video games have made many a teenager almost sedentary. Take the television out of the bedroom and insist on viewing limits. Instead go for a walk as a family, or perhaps get bikes for everyone.

You could even do your housework in a way that you could get some exercise while doing them. Providing movement is your aim no matter what is necessary.

We all have cherished memories of eating perfectly ripe cherries on a summer’s day as children. There is no reason you cannot add to those memories, however – cherries are the ideal treat for people of all ages. It is easier than you might think to get cherries into your diet; they are great to eat just the way they are, but you can use cherries in many different dishes. Try some dried cherries in your oatmeal – they are a delicious and healthy change of pace from raisins. Dried cherries also work well in muffins and other baked goods.

Less sweet than syrup or sugar, dried cherries are a great way to dress up your oatmeal naturally. They are also a great addition to trail mix, where they add welcome color and flavor, not to mention vitamins and minerals.

You will also find that cherries can also bring a lot of savor and sweetness to a beef dish, and the juice from the cherries can do a lot to keep the beef from drying out. The cherries will add some of their flavor to the chili and add an interesting textural element to the chili as well. This is a great way to dress up the same old chili and make it exciting.

In addition, of course there is jell-o. Do you even need a reason to add cherries to jell-o? After all, cherry jell-o is already incredibly popular. Add some chopped cherries to your jell-o to dress up this dessert standby. You can also alternate layers of jell-o with white cake to create a jell-o cake!

An icing for your jell-o cake can be made by mixing together your cherry jell-o (with fresh cherries, of course) and whipped cream. If you can keep from eating it before it makes it to the cake, then this is a great final touch to your jell-o cake. You can also add dark cherries to a bowl of vanilla ice cream or yogurt for a delicious dessert.

Delicious and healthy, cherries are a great treat all of us should indulge in more often. They can be added to so many different dishes that you can eat them every day of the week – if you don’t just eat them all fresh on the way home from the store, that is!
